Here's another favorite recipe...this one happens to be my Mom's! Sweet Potato Casserole...It's awesome!
Ingredients:
3 pounds sweet potato cooked
1/2 c. butter (room temperature)
1 c. sugar
2/3 c. evaporated milk
2 tsp. vanilla
Topping:
2 cups Brown Sugar (no wonder I love it so much!)
2/3 c. flour
2/3 c. butter (room temperature
2 cups pecans
Directions:
Peel and cook sweet potatoes (you can boil them as you would do for mash potatoes). Mash the sweet potatoes and blend in butter, sugar, milk, and vanilla. Put in a 2 1/2 quart casserole dish. Mix brown sugar, flour, butter and pecans for the topping and place on top of sweet potato mixture. Bake at 375 degrees for 35 minutes.
